It’s summer and while I’m thinking about (salad) dressing everyone else in town seems to be thinking about just how far they can be un-dressing. Ah well, I guess that with the right company for supper, one can lead to the other (and, in the current sultry temperatures, we will all be lying naked as lettuce leaves in our beds tonight).
Anyway, on the off-chance you’re still thinking about salads, here’s my suggestion from supper tonight. The honey undercuts what would otherwise be too sour a vinaigrette, and this is one of those dressings I hope will be left over so I can mop it up with bread at the end.
3 tsp lemon juice
1 tsp white wine vinegar
0.5 tsp honey
1 tbsp olive oil
pinch black pepper
Mix together and drizzle over tomatoes, lettuce, cucumber, bread, your friend etc.
