Honey cream with raspberries

I learned the recipe for honey cream with raspberries from a Kosovan recipe book (The Kosovan Kitchen).  ‘Cream and honey’ is an Albanian expression for indulgence (one step richer than ‘milk and honey’) and I included the recipe in my book about becoming a beekeeper in Kosovo.

Tonight I was talking about Travels in Blood and Honey; becoming a beekeeper in Kosovo at the Wadebridge Bookshop and I made some of the recipes from the book to illustrate my talk.  As well as the scone-like gurabie, I prepared tiny Kosovan tea glasses filled with the honey cream with raspberries.  They looked beautiful and were gobbled up.

Recipe:

Ingredients

375g raspberries

375g cream cheese

1.5 tbsp lemon juice

1.5 tbsp vanilla sugar

6 tbsp honey

Wash and drain the raspberries. Mash half of them with a fork and keep to one side. Combine the other half of the raspberries with the other ingredients, and spoon into tall glasses. Top with the mashed raspberries.
